Domaine Roc des Anges Alquimia 2024 is a distinctive Vin de France blanc from Montner in the Roussillon. The cuvée is based on old-vine Grenache Gris and Macabeu grown on ancient schist soils, where naturally low yields and the cool influence of the Pyrenees help preserve freshness and tension.
For 2024, Alquimia comes from an assemblage of barrels from the 2021 and 2022 harvests. The grapes are hand-harvested, pressed as whole bunches and fermented with indigenous yeasts. The wine is then matured in used barrels without topping up, allowing a protective veil of yeast to develop. One to two years of ageing under voile gives Alquimia its subtle oxidative character while retaining striking energy and salinity.
