🍇 About the wine

Le Clin d’Œil 2023 highlights Loin de l’Œil, a rare native variety from Gaillac. Fruit from a single plot on the Cordais limestone plateau is vinified with a focus on purity and terroir expression.

Fermentation in terracotta amphorae is followed by ageing in egg-shaped concrete vats, where the fine lees remain naturally suspended and add texture and complexity.

Appearance: Deep yellow with golden highlights.
Nose: Acacia, elderflower, melon and pear with herbal and garrigue nuances.
Palate: Smooth and generous, with ripe white fruit, creamy texture and mineral tension.
Finish: Long and elegant, with a delicate almond-milk note.
