A concentrated biodynamic Bordeaux from old vines, combining a deep garnet colour, a rich bouquet and a complex, exceptionally long palate.
🍇 About the wine
Le Chevalier 2019 is a plot selection from vines more than 75 years old, with an exceptionally low yield of 20 hl/ha. The blend combines 70% Cabernet Sauvignon and Cabernet Franc with 30% Merlot.
The wine is matured for 18 months in new French oak barrels and racked every three months. This meticulous élevage gives Le Chevalier impressive depth, structure and ageing potential.
🍷 Tasting notes
Appearance: Deep, dense garnet red.
Nose: Intense and rich, with dark fruit, cedar and fine spice.
Palate: Powerful and complex, with concentrated fruit, firm structure and polished oak.
Finish: Exceptionally long, layered and persistent.
🍽️ Food pairing
An excellent companion to grilled or roasted red meat, venison, wild boar, slow-cooked beef and richly flavoured game dishes. Also pairs beautifully with mature cheeses.
