Appearance: Crystal-clear, pale straw yellow.

Nose: Bright and fruit-driven, with crisp apple and exotic fruit at the forefront, followed by delicate white-flower nuances. The profile is clean and youthful, emphasizing varietal freshness rather than oak or maturation notes.

Palate: Dry, fresh and elegant, with lively acidity and a direct continuation of the fruit found on the nose. Crisp orchard fruit and subtle tropical notes give it an immediately approachable character, with a clean, refreshing finish.

Style: Lighter and more straightforward than Deltetto's San Michele Arneis. Daivej is about freshness, fruit and drinkability, whereas San Michele gains additional structure and complexity through cement and French-oak fermentation and maturation.

The fresh, uncomplicated style makes Daivej particularly versatile: aperitif • seafood • grilled octopus • prawns • calamari • light fish dishes • vitello tonnato • fresh cheeses • vegetable antipasti • light pasta dishes • Asian cuisine.

Deltetto themselves particularly recommend grilled octopus, while also suggesting Piedmontese antipasti and more exotic dishes.
