🍷 an organic-style natural white wine crafted by Bastien Jolivet. Grapes are harvested at ideal ripeness and gently pressed; fermentation partly in large oak barrels (≈70% in demi-muids), and partly in stainless steel.
Aging: 6 months split between foudres (or demi-muids) and inox, balancing texture and purity.
