Wine Pairing Salmon fried or poached
Baked or grilled salmon can be used with both white and red. Salmon is a noble fish and so it goes with a noble wine: chardonnay or chenin blanc (in white) and pinot noir (in red). Poached salmon (with Hollandaise sauce) is more likely to call for white wine.
