The vines of the scorpion all grow on silex soils. Bright gold and shiny silver. This Sancerre is particularly spicy in the bouquet, has a lot of white pepper, then white flowers, rose petals and Granny Smith apple. The terroir-related then appears on the palate. Here the fruit fades into the background and the silex (flint) speaks. Despite the stony nature, this remains a brilliant, crispy cuvée that comes across as vibratingly fresh on the palate. A precise and very typical Sancerre.
You can serve this wine with shellfish or crustaceans, oysters, grilled asperagus, fresh salads, poched trout and certainly Crottin de Chavignol (regional goat cheese).
