Wine Pairing Brill
Brill is a fine, noble fish, and the wine must have the same qualities. This fish therefore deserves a good chardonnay, sauvignon blanc or chenin blanc. Tannins rarely go together with fish, so in red it is best to opt for young pinot noir, gamay or poulsard.
