TASTING: pure gold color with gray reflections. First of all, it evokes green pear, quetsche or Mirabelle plum. As it opens, the nose offers us notes of ripe wheat. The first contact with the effervescence is delicate, silky and makes us want to go further. The aromatic profile of the wine goes very well with the nose.
FOOD AND WINE PAIRING: Simple pleasure: shellfish, goat cheese/honey toast, green olive tapenade. Moments of relaxation: autumnal risotto with chanterelles, lemon meringue tart. Gastronomy: supreme of chicken with morel sauce and mashed butternut squash, lean carpaccio with olive oil, yuzu and saffron.
