Harvested in the morning, the berries are carefully separated from the stems and gently crushed. The must and skins undergo spontaneous fermentation during a week-long maceration. The wine is then racked and aged for 12 months in new 500-liter French oak barrels.
Rebecca is a vibrant and youthful wine, offering a complex and expressive bouquet of red fruit notes. It features low tannins, a silky texture, and a well-balanced finish, with remarkable persistence on the palate.
Goes alon well with beef, veal, poultry and light game (deer, venison).
