Intense ruby colour. Flattering nose of red fruits, liquorice and menthol notes. Aromas of crunchy black fruits, truffle, garrigue. It is a rich, complete wine, with dense and elegant tannins, supported by a beautiful length in the mouth.
Food-wine pairing: Grilled and roasted white meats, Grilled and roasted red meats, Meats in brown sauce, Game, Cheeses
Recipes: Veal Marengo, Wild boar stew
Soil: Red clay and rolled pebbles - sandstone - sandy loamy terraces.
Age of the vines: between 40 and 80 years old.
Viticulture: Organic farming. Traditional size in Gobelet, Cordon de Royat (Syrah). Plowing, grassing one row out of two, leaf stripping, addition of sheep compost for the life of the soil.
Vinification: Manual harvest. Sorting in the vineyard. Destemming. Indigenous yeasts. Maceration 3 weeks to 1 month. Pumping over and pigeage. Aging between 12 and 15 months in concrete vats and half-muids in French oak (600L).

Dégustation : Robe rubis intense. Nez flatteur de fruits rouges, réglisse et notes mentholées. Arômes de fruits noirs croquants, de truffe, de garrigue. C'est un vin riche, complet, aux tanins denses et élégants, soutenu par une belle longueur en bouche.
Accord mets-vin : Viandes blanches grillées et rôties, Viandes rouges grillées et rôties, Viandes en sauce brune, Gibier, Fromages
Recettes : Veau Marengo, Civet de sanglier
Terroir : Argile rouge et galets roulés - grès - terrasses sablo limoneuses.
Ages des Vignes : entre 40 et 80 ans.
Viticulture : Agriculture biologique. Taille traditionnelle en Gobelet, Cordon de Royat (Syrah). Labour, enherbement un rang sur deux, effeuillage, apport de compost de mouton pour la vie du sol.
Vinification : Vendange manuelle. Tri à la vigne. Egrappage. Levures indigènes. Macération 3 semaines à 1 mois. Remontages et pigeages. Elevage entre 12 et 15 mois en cuve béton et demi-muids en chêne français (600L).
