Nose of pear, honey, acacia flower, damp stone, a small touch of pomelo. With aeration, the stone and citrus zest take over. Round, ample, airy palate, tense with a fine, slightly sparkling acidity which lengthens the wine. Beautiful sensation of purity. Lingering finish between the chewiness of the chalk and the bitterness of the citrus zest, all very soft, refined. A miracle of balance. Enjoy this wine with scallop tartare with citrus zest and roast monkfish.
