
Wine Pairing: Rayfish
Rayfish with butter and capers is a classic preparation, and it is especially the capers that make the choice of wine somewhat more difficult because they have a rather pronounced sourness. I prefer to pair this with a wine that has sufficient accidity itself as does most Sauvignon Blanc or if you want to go a step further try an oxidative wine from the Jura - mostly with Savagnin.
