Definition: that which is unusual, like this unique grape variety in France, specific to the Jura. The grape variety is 100% trousseau coming from a Bajocian limestone terroir with a western exposure. The yield is 40 hl/ha. Vatting takes place for 10 days with pumping over and fermentation takes place in vats with the skins. Aging takes place in an oak barrel container for a period of 6 months. The wine is unfined, with light filtration. Tasting: the wine is very colorful, with a nose of cooked fruit, a full mouthfeel and well-blended tannins. Drink with meat in sauce, game or cheese such as Morbier.
