The grapes are harvested in October, shrouded in fog and with some bunches covered in botrytis. Spontaneous fermentation in steel and maturation for 18 months in oak barrels.
Cherry and leather on the nose, in the mouth we discover red fruit, tobacco and liquorice to finalize with plum and earthy notes. Very elegant wine with smooth tannins and good length.
This Sangiovese pairs well with a variety of foods. Pasta Dishes with tomato-based sauces, like marinara or Bolognese, complement Sangiovese's acidity. Pizza with traditional toppings like Margherita or pepperoni work well due to the wine's fruity notes. Grilled meats as lamb, beef or pork grilled with herbs enhance the wine's earthy flavors. But try these Italian dishes like osso buco or risotto with mushrooms. Don't forget to enjoy some aged cheeses, such as Pecorino or Parmigiano-Reggiano.
