Saint-Doulchard marls from the Upper Kimmeridgian. Natural vinification, 100% fermentation with native yeasts. Cold pre-fermentation maceration for around 8 days then natural start of fermentation. Light punching down is carried out during this period. Vatting for 3 to 5 weeks depending on the vintage. Aged in barrels for around twelve months. Bottled without filtration.
Nose with notes of almost candied fruit, spices. Full, ripe, fleshy palate, with velvety tannins and a nice balance of freshness. Vigorous and chewy finish. It is a full-bodied wine that needs to be combined with fairly powerful cuisine, for example marinated game (wild boar, venison, etc.) or even characterful cheeses.
