Wine Pairing: Vegetables

Vegetables in a dish are rarely so dominant that the choice of wine must be based on this. Nevertheless, vegetables play an increasingly important role in preparations, and therefore it may be necessary to adjust the wine choice in certain preparations. Of course, vegetables play the leading role in vegetarian and vegan dishes, which determines the choice of wine. There are so many vegetables, and as many preparations as possible, that it is impossible to propose a suitable wine for each vegetable separately. It is therefore useful to observe some general rules. We divide the vegetables into 3 groups (see submenus).

Groente in een gerecht is zelden zo dominant dat de wijnkeuze hierop gebaseerd moet worden. Toch spelen groenten een steeds belangrijker rol in bereidingen, en daarom kan het in bepaalde bereidingen nodig zijn om de wijnkeuze toch aan te passen. In vegetarische en veganistische gerechten spelen groenten uiteraard wel de hoofdrol, wat bepalend is voor de wijnkeuze. Er zijn zoveel groenten, en zoveel mogelijke bereidingen ervan, dat het ondoenbaar is om voor elke groente apart een passende wijn voor te stellen. Daarom is het nuttig enkele algemene regels in acht te nemen. We verdelen de groenten in 3 groepen (zie submenu's).
