Intense red color with plum highlights. Complex nose of very ripe and stewed black fruits, rare wood essences. Powerful and straight mouth, with tight tannins. Aromas of cherries (Kirsch), spices, toasted notes. For lovers of rare wines.
Food-wine pairing: alone… or with a rib of beef, a shoulder of lamb. Cheese: a Salers, a Beaufort. Or to enhance a Grand Cru dark chocolate!
Vinification: manual harvest. Sorting in the vineyard. Destemming. Indigenous yeasts. Maceration 3 weeks / 1 month. Pumping over and punching down. Aging 12 months in French oak demi-muids (600 l).
