Garnet color with purple reflections. Nose of garrigue and aromatic plants as rosemary and thyme. Lively, peppery palate with aromas of spices and small black fruits. The tight tannins give a remarkable density.
Pairings with spicy and tasty dishes: tajine, peppercorn steak, couscous, duck breast with Espelette pepper, paella, lamb curry.
In the heart of the Dentelles de Montmirail, at an altitude of 400 m: Black marl and limestone scree. Vinification: manual harvest. Sorting in the vineyard. Destemming. Indigenous yeasts. Maceration for 3 weeks. Pumping over and punching down. Aging for 12 months in concrete vats.
