Floral Savagnin with notes of white flowers, lychee that will perfectly accompany an aperitif as well as exotic dishes. Its long aging in vats calls for a specific vinification technique, "l'ouillage", which consists in regularly adding a wine of the same type to the barrels and thus compensating for the loss of wine caused by evaporation. The "ouillage" prevents oxidation of the wine during long aging. This wine ideally enhances a quiche, a cheese soufflé, a gratin or a grilled fish.

Savagnin floral aux notes de fleurs blanches, de litchi qui accompagnera parfaitement un apéritif ainsi que des mets exotiques. Son long élevage en cuve fait appel à une technique de vinification spécifique, l'ouillage, qui consiste à ajouter régulièrement un vin de même type dans les fûts et compenser ainsi la perte de vin causée par l’évaporation. L'ouillage permet d'éviter l'oxydation du vin lors d'un élevage long. Ce vin rehausse idéalement une quiche, un souflé au fromage, un gratin ou un poisson grillé.

JP Guyon baie par baie

Jean-Pierre Guyon uses "baie par baie technique" already since 2020. The result is called the pinot caviar: grapes destemmed by hand, berry by berry, with a pair of scissors - leaving the grapes intact with the pedicels in place.
