Deep amber color with orange and copper highlights. On the nose, a vibrant intensity where macerated fruits intertwine with spicy and balsamic notes. A subtle freshness brought by delicate aging reveals aromas of fresh wood, cappuccino, arnica, stone, nuts and bitter orange, enhanced by touches of curry, orris root and vanilla. On the palate, a harmonious alliance between energy and tension, carried by a candied and spicy aromatic: liquorice, nuts and almond. The bright finish is sublimated by a hint of bitterness and refined nuances of dried fruits.
Pairs well with fine grilled poultry or duck, subtle game, grilled fish or fish in spicy sauces, spicy dishes, curry, tajine with dried fruits and hard cheeses.
Terroir fresh, clayey-limestone terroir on Mercurol.
Vinifications: The harvest took place at the end of August. The grapes were harvested manually. Destemmed, macerated for 1 month in vat. Aged for 12 months in demi-muid, then 6 months in vat. Wine without additives.
