Weingut Schnabl Vol.3 is an organic, biodynamic white wine from Southern Styria blending Morillon (Chardonnay) and Sauvignon Blanc. It offers herbal and spicy aromas, thoughtful complexity, a lively acidity and a long finish.

Tasting Profile: The wine shows ripe, spicy notes alongside herbal aromas. Specifically  aromas of herbs, quince and light roasted notes.
On the palate: multilayered, powerful with an animated acidity structure and a long finish.

The blend of Morillon (Chardonnay) and Sauvignon Blanc is handled thus: Sauvignon Blanc is fermented on the skins, gently pressed, aged on full lees in used wood barrels. Morillon  fermentation with skin contact, then gently pressed and matured on full lees in used wood barrels.

Food Pairing & Serving Suggestions. Due to its herbal/ spicy profile and lively acidity, it pairs well with dishes that have a bit of spice or herbaceousness — e.g., Asian-inspired cuisine, dishes with green herbs, slightly spicy components. Also versatile: its structure supports richer fish dishes, poultry with herbs, vegetarian dishes with spice or roasted vegetables.

Why It Stands Out
The biodynamic and low-intervention approach means the wine is less “standardised” and more expressive of site and vintage.
The combination of Chardonnay (Morillon) with Sauvignon Blanc in this region: a somewhat less common blend, giving freshness (from Sauvignon) plus texture and depth (from Morillon).
The aging on lees and in used wood barrels gives complexity, while the relatively moderate alcohol (11.5 %) helps maintain elegance and drinkability.
It’s labelled “Vol. 3” implying a series and thoughtful production rather than mass-wine.
