🥂 Tasting Notes

Appearance: Slightly transparent garnet red — elegant clarity rather than dense opacity. 
Aroma: A floral yet ripe profile — violet, rose petals and jasmine interplay with ripe dark fruit (black cherry, blackberry), warm bread and almond notes, with herbal undertones and a hint of warm bark or spice. 
Palate: Balanced and finely textured: juicy red and blue berry fruit gives freshness, supported by fine but noticeable tannins and lively acidity. Notes of undergrowth, sloe, subtle oak spice (cinnamon bark), herbs, and a minerally edge add complexity. The finish is long, clear, with tension rather than heavy extraction.
Food Pairing: Excellent with grilled lamb or beef, mature semi-hard cheeses, vegetable-rich stews, even truffled polenta. Serve slightly chilled if young, or decanted.

Grapes & Vinification: Primarily Tempranillo with small proportions of other local / traditional varieties (such as Viura, Malvasía, etc). Grown on poor, calcareous soils with bush-trained vines. Hand-harvested, destemmed, spontaneous fermentation, aged in French barriques.
