Wine Pairing Vegetables
Vegetables are seldom so dominant in a dish that they alone dictate the choice of wine. However, as vegetables take on an increasingly prominent role in contemporary cuisine, certain preparations do call for a more considered pairing.
In vegetarian and vegan dishes, vegetables naturally take center stage, making them a defining factor in the selection of wine. Given the vast diversity of vegetables and the countless ways in which they can be prepared, it is neither practical nor desirable to recommend a specific wine for each individual ingredient.
Instead, it is more useful to rely on a set of general principles. For clarity and guidance, we divide vegetables into three main groups (see submenus).
