The decision not to disgorge the wine after the secondary fermentation results in the presence of fine lees, which makes the wine slightly cloudy, yet still shows very pale lemon-yellow hues.
A delicate nose opens with floral sensations and citrus notes.
On the palate, it is pleasant, with an aromatic freshness that echoes the nose. If you taste it without letting the fine lees settle, you’ll get additional texture that naturally increases body and brings a hint of salinity. The sip is fluid and vibrant, with very fine, delicate bubbles.

By definition, this type of wine is best enjoyed with summer dishes that are simple and convivial — like fresh goat cheeses or rustic toasts.
It also pairs nicely with grilled blue fish.
Perfect as an aperitif or with a seafood platter — it’s ideal with oysters and crab.
