Intense ruby colour. Flattering nose of red fruits, liquorice and menthol notes. Aromas of crunchy black fruits, truffle, garrigue. It is a rich, complete wine, with dense and elegant tannins, supported by a beautiful length in the mouth.
Food-wine pairing: Grilled and roasted white meats, Grilled and roasted red meats, Meats in brown sauce, Game, Cheeses. Veal Marengo, Wild boar stew.
Vinification: Manual harvest. Sorting in the vineyard. Destemming. Indigenous yeasts. Maceration 3 weeks to 1 month. Pumping over and punching down. Aging between 12 and 15 months in concrete vats and French oak demi-muids (600L).
