Buzançais limestones from the Lower Kimmeridgian. Natural vinification, 100% fermentation with native yeasts. Cold pre-fermentation maceration for around 8 days then natural start of fermentation. Light punching down is carried out during this period. Vatting for 3 to 5 weeks depending on the vintage. Aged in barrels for around twelve months. Bottled without filtration.
A gourmet red Sancerre marked by the minerality of its limestone terroir. Intense, deep red color. Full and fleshy mouth. Very good pairing with red meats, meats in sauce, game and at the end of the meal, cheeses.
