Winemaking process

Vinification: Grapes are hand-harvested at optimal maturity to maintain freshness and aromatic intensity. Gentle pneumatic pressing is used to obtain clean juice while preserving delicate aromatics. The must undergoes static cold settling prior to fermentation to ensure clarity and purity. Alcoholic fermentation takes place in temperature-controlled stainless steel tanks. Low fermentation temperatures are maintained to preserve primary fruit character and varietal definition.
The wine is aged on fine lees for a short period to enhance texture and mouthfeel. Regular lees stirring (bâtonnage) may be applied to build roundness. There is no significant oak influence, allowing the freshness and mineral profile to remain dominant.
