This merlot differs greatly from the classic versions due to the volcanic soil and an altitude of 500m. A dark red wine with fruity aromas of red fruits, blackberries and pepper. The taste is full with firm acids and tones of herbs, raspberry, blackberries, cherries and tobacco. The aftertaste is medium. Perfect wine to combine with pasta, beef, lamb and game dishes such as hare and wild boar.

Spontaneous fermentation occurs in open wooden vats, where the grapes are left in contact with the skins for 20 days. Maturation in large oak barrels for 12 months and refinement in bottle for at least 12 months. No clarification or filtration is performed.
