The Chalasse vintage is made from a blend of Chardonnay and Savagnin ouillé (the barrel is permanently filled up to the bung unlike vin jaune, which is "non ouillé"). A wine of great balance, an ample mouthfeel with great saline and smoky freshness. Powerful wine for rich cooked dishes, poultry in vin jaune, sole meunière, cheeses.
