The vines thrive on varied terroirs of clay-silt alluvium and sand. Grapes are hand-picked into racks and meticulously sorted by hand on sorting tables before being placed in vats. Crushing occurs directly at the vat’s base. With intentionally low yields of 35 hl/ha, fermentation is driven by indigenous yeasts. The wine is aged for 18 months in a mix of new barrels (20%) and barrels used once before (80%).
A dark ruby wine with shimmering highlights. The nose is vibrant and defined by aromas of ripe black fruits. The finish is notably long, with distinct hints of cherry pit.
Goes along well with beef, veal, poultry and light game (deer, venison).
