Red mullet (rouget barbet) is a fantastically tasty fish, which is best fried or grilled. It goes perfectly with red wine, for example a young gamay, pinot noir or cabernet franc from the Loire. White wine is of course also possible, in which case it is best to opt for a somewhat more southern type because the red mullet also has a Mediterranean character.
