- With blue-veined cheeses, such as Roquefort, Bleu cheeses, and Fourmes d'Ambert, opt for a soft, mild sweet white that will envelop these strong-flavored cheeses.
- For dry cheeses with a strong flavor, such as Comté, Beaufort, Tomme, or Emmental, uncork a light, fruity wine like Beaujolais, Saumur red, or Sancerre blanc, Arbois, Savoie, or Jura. Nothing beats Vin Jaune with old Comté cheeses.
- For dry cheeses with a mild flavor, such as Cantal, light, dry, and fruity red wines such as Chinon, Bourgueil, or Cabernet will be very suitable. White wines, such as Sancerre or Saumur, can also be a good choice.
- For goat cheese, white wine is the best choice! For goat cheese, definitely choose white wine! Even semi-dry or even sweet wines can be excellent depending on the cheese's maturation.
- For soft cheeses with a mild flavor, such as Brie or Brillat-Savarin, opt for light red wines like certain Loire wines or tannic ones for the Saint-Nectaire cheeses.
