A very complex and distinguished nose of spices, leather and sous-bois. On the palate, beautiful structure with fine tannins and great length on freshness.
Recommended with fine dishes and game.
Hillside plots in the heart of the scrubland. Vinification: Manual and destalked harvest; fermentation with indigenous yeast (naturally brought by the grape skin); long fermentation of approximately 40 days with a daily dynamisation. Aged for 18 to 24 months: 20% in amphora and 80% in oak; no use of finings or filters.
