Vincent Gaudry Constellation du Scorpion Sancerre 2022 Blanc
The vines of the scorpion all grow on silex soils. Bright gold and shiny silver. This Sancerre is particularly spicy in the bouquet, has a lot of white pepper, then white flowers, rose petals and Granny Smith apple. The terroir-related then appears on the palate. Here the fruit fades into the background and the silex (flint) speaks. Despite the stony nature, this remains a brilliant, crispy cuvée that comes across as vibratingly fresh on the palate. A precise and very typical Sancerre. You can serve this wine with shellfish or crustaceans, oysters, grilled asperagus, fresh salads, poched trout and certainly Crottin de Chavignol (regional goat cheese).
