👃 Aromatic Profile & Palate
Color: Deep, intense purplish-red with strong ruby reflections.
Nose: A complex aromatic profile combining ripe red fruits—blackberry, black cherry, currants—with nuanced notes of cocoa and mocha.
Palate: Structured and frank on entry, supported by fine, melting tannins. Flavors of wild blackberry and gooseberry jelly are enlivened by spicy touches of white and pink peppercorn, and a discreet camphor-like nuance that adds character and length.

Soil & Location: Vines are planted on clay-limestone soils of the Cordais plateau near Cestayrols, contributing both freshness and structure.
Harvest: Hand-picked with careful selection for optimal ripeness. Late harvesting ensures concentrated flavors and a slightly opulent side.
🏗 Vinification & Aging
Integral vinification: All winemaking steps—including fermentation, maceration, and aging—are carried out in 400 L French oak barrels.
Daily punch-downs (pigeage) are performed manually to enhance color and tannic structure in a gentle way that avoids astringency.
Aging lasts about 18 months in barrel, followed by light filtration before bottling in the spring.
