Hillside plots in the heart of the scrubland. Manual harvest, sorting berry by berry and reintegration of the Cinsault stalks. Fermentation with native yeasts. Vatting for 40 days in open demi-muids punctuated by a few punching downs at the start of fermentation. Unpasted and unfiltered. Native yeasts. A dark, expressive, complex and subtle nose of black fruits, licorice and humus. On the palate, power and elegance, tannins of extreme finesse, freshness, long and rich finish with aromas of the nose. A wine full of lace! Recommended dishes: fine dishes (ostrich, lamb), game (woodcock, venison, hare).
