Aging in sandstone vessels
This new vintage “Mes Nuages” is now available from the 2022 vintage. Jean-Pierre desired to highlight the “en nuage” sorting technique, that is to say the way the grapes are destemmed on the sorting table and the specific winemaking technique. To make this cuvée, the grapes are selected from different plots of vines, so it does not benefit from a particular appellation.
With the “tri en nuage” technique the whole clusters are cut up by hand, removing the central stems of each bunch while leaving the pedicels, the very small stalks that hold each individual grape. The result is an ethereal perfume in the wine which takes it to higher levels of epicurean joy.
To produce this cuvée, the first selected grapes come directly on the sorting table for the premiers crus and grands crus, and then made a second selection of wines in the cellar. Then the wines are blended to create a balanced cuvée, combining the power of our various terroirs—bringing depth—with the elegance and finesse of this meticulous sorting method.
After the fermentation in oak vats, the aging of the wine continues in sandstone vessels. Aging wine in sandstone is an ancient method to mature wine, creating unique flavor profiles due to the rock's natural characteristics. Sandstone, like other porous stones, allows small amounts of oxygen to enter during the aging process, similar to oak barrels but without adding woody flavors. This controlled oxygen exposure can help in softening tannins and developing complexity, while still preserving the grape's original flavors.
