The Durello grape is a variety of white wine grape primarily grown in the Veneto region of northeastern Italy. It's known for producing sparkling wines with crisp acidity and refreshing character. The grape is often used in the production of high-quality sparkling wines, such as those made in the traditional Metodo Classico or Charmat methods.
The grapes are harvested and immediately pressed. Fermentation occurs spontaneously with its indigenous yeasts in stainless steel and ends in acacia barrels, where it rests until the moment of foaming. Refermentation in the bottle occurs with the sole addition of Boschera grape must (5%). The bottles remain on the yeasts for 24 months before being disgorged and immediately corked again, adding only the quantity of wine lost during the process.
