This wine is an oxidative-type Chardonnay and Savagnin blend with lovely aromas of nuts, spices and celery on fine notes of curry. A powerful and concentrated wine with a good length. Serve with chicken with morels or avocado, curried poultry tagine, Comté over 24 months old, walnut tart.
The wine is kept seperately (savagnin and chardonnay) for 2,5 years in open oak barrels, what results in oxidation. After some time a veil is formed on top of the wine preventing it from oxydating further. A remarkable but typical Jura-technique.
