Very pale gold color. Delicate nose of flowers and white fruits. The bubbles are fine and airy, the palate is elegant, persistent, with notes of fresh fruit and vanilla. Nice relief on the finish, with a delicate finish. An easy-to-drink sparkling wine, very nice overall harmony.
Pairings: aperitif, grilled fish, shellfish or on its own!
Terroir: At the foot of the Dentelles de Montmirail, terraces of sand and limestone sediments (oyster fossils and ammonites) which benefit from a microclimate sheltered from the Mistral. Vinification: Harvested early, at the end of August, to preserve the finesse of the aromas and the freshness. Direct pressing, cold settling, fermentation at very low temperature.
