A particular wine made with red Sangiovese grapes vinified in white, an ancient thechnique of old chianti farmers, refined by modern methods. Because of its cool, crisp acidity, this wine is great with fried Italian foods like artichokes served with an aioli sauce. The freshness of the glass will refresh the palette from the heavy bites. Its lightness also does well light seafood and white meats. A great summer wine!

Un vin particulier élaboré avec des raisins rouges Sangiovese vinifiés en blanc, une ancienne technique des anciens agriculteurs du chianti, affinée par des méthodes modernes. Avec son acidité fraîche et vive, ce vin est excellent avec des plats italiens frits comme des artichauts servis avec une sauce aïoli. La fraîcheur du verre rafraîchira la palette des grosses bouchées. Sa légèreté convient également aux fruits de mer légers et aux viandes blanches. Un grand vin d'été !

JP Guyon baie par baie

Jean-Pierre Guyon uses "baie par baie technique" already since 2020. The result is called the pinot caviar: grapes destemmed by hand, berry by berry, with a pair of scissors - leaving the grapes intact with the pedicels in place.
