High-end Chardonnay. Fermentation with indigenous yeasts, natural vinification, light sulphiting during bottling and light filtration. The palate is long and mineral with grilled and toasted notes. A very nice complex wine with aromas of spices. Accompanies: starter, grilled white meat, roasted chicken, grilled fish.

Le Chardonnay haut de gamme. Fermentation avec levures indigènes, vinification naturelle, léger sulfitage lors de la mise en bouteille, non collé et légère filtration. La bouche est longue et minérale avec des notes grillées et toastées. Un très joli vin complexe aux arômes d'épices. Accompagnement : entrée, viande blanche grillée, poulets rôtis, poisson grillé.

JP Guyon baie par baie

Jean-Pierre Guyon uses "baie par baie technique" already since 2020. The result is called the pinot caviar: grapes destemmed by hand, berry by berry, with a pair of scissors - leaving the grapes intact with the pedicels in place.
