Ripe fruits dominate, with Morello cherries taking first place. Then come the notes of cocoa and sweet spices (vanilla and cinnamon). The attack is frank and elegant, with a beautiful tannic structure that will allow it to improve over time. The fruity aromatic framework follows us throughout the tasting while the finish will be reinforced by roasted nuances. We will accompany it with a beautiful duck breast with cranberries or for the greediest with a 100% dark chocolate mousse.

Les fruits mûrs dominent, la griotte tenant la première place. Viennent ensuite les notes de cacao et d’épices douces (vanille et cannelle). L’attaque est franche et élégante, avec une belle structure tannique qui lui permettra de se bonifier dans le temps. La trame aromatique fruitée nous suit tout au long de la dégustation tandis que la finale sera renforcée par des nuances torréfiées. On l’accompagnera d’un beau magret aux airelles ou pour les plus gourmands d’une mousse 100% chocolat noir.

JP Guyon baie par baie

Jean-Pierre Guyon uses "baie par baie technique" already since 2020. The result is called the pinot caviar: grapes destemmed by hand, berry by berry, with a pair of scissors - leaving the grapes intact with the pedicels in place.
