Natural Wine. Rosé wine from the Provence region, non-yeasted (native yeast), pressed during the harvest, from Grenache (45%), Cinsault (25%), Carignan (30%). The grapes are harvested by hand, early in the morning, on different plots of 20-30 year old vines with low yields (30hl/ha). Nice acidity of small red fruits such as redcurrant, scents of peppery spices and essences of garrigue. Serve with sea urchins and seashells.
