Well structured wine, full body, velvety, spicy. Easy drinking Chianti very balanced between red berries, sangio spices, fine tannins and fresh backbone. No over ripeness and very accessible as soon as the cork is popped. Chianti classico goes very well with meat dishes such as ossobuco, lamb leg, lamb chops, roast beef in Madeira sauce, wild duck, venison and pizza with meat. Goes also well with young fresh cheeses such as English Cheshire, Dutch young or mature Gouda cheese and Italian taleggio.

Vin bien structuré, corsé, velouté, épicé. Chianti facile à boire très équilibré entre baies rouges, épices sangio, tanins fins et épine dorsale fraîche. Pas de surmaturité et très accessible dès que le bouchon est sauté. Le Chianti classico se marie très bien avec les plats de viande tels que l'ossobuco, le gigot d'agneau, les côtelettes d'agneau, le rosbif à la sauce madère, le canard sauvage, le gibier et la pizza à la viande. Se marie aussi bien avec les jeunes fromages frais comme le Cheshire anglais, le Gouda hollandais jeune ou affiné et le Taleggio italien.

JP Guyon baie par baie

Jean-Pierre Guyon uses "baie par baie technique" already since 2020. The result is called the pinot caviar: grapes destemmed by hand, berry by berry, with a pair of scissors - leaving the grapes intact with the pedicels in place.
