Fresh and fruity wine, based on Sangiovese grape with 20% Cabernet Sauvignon & Merlot. Deep purple. Meaty leathery nose dark fruits and a bit spicy. Medium body, fresh dark fruits, damp soil and chocolate. Good structure dense and well balanced. Medium finish with dark fruits. Chianti classico goes very well with meat dishes such as ossobuco, lamb leg, lamb chops, roast beef in Madeira sauce, wild duck, venison and pizza with meat. Goes also well with young fresh cheeses such as English Cheshire, Dutch young or mature Gouda cheese and Italian taleggio.

Vin frais et fruité, à base de cépage Sangiovese avec 20% de Cabernet Sauvignon & Merlot. Violet foncé. Nez charnu et coriace de fruits noirs et un peu épicé. Corps moyen, fruits noirs frais, sous-bois et chocolat. Bonne structure dense et bien équilibrée. Finale moyenne avec des fruits noirs. Le Chianti classico se marie très bien avec les plats de viande tels que l'ossobuco, le gigot d'agneau, les côtelettes d'agneau, le rosbif à la sauce madère, le canard sauvage, le gibier et la pizza à la viande. Se marie aussi bien avec les jeunes fromages frais comme le Cheshire anglais, le Gouda hollandais jeune ou affiné et le Taleggio italien.

JP Guyon baie par baie

Jean-Pierre Guyon uses "baie par baie technique" already since 2020. The result is called the pinot caviar: grapes destemmed by hand, berry by berry, with a pair of scissors - leaving the grapes intact with the pedicels in place.
