Fruity and exuberant, grapefruit notes are blended with scents of fresh mango. The onset is clear and lively with a dominance of exotic fruits. We are seduced by a sweet final with mixed notes of sweetness and freshness, leaving on the tongue a nice touch of acidity. As an aperitif, with a fresh goat cheese, a dahl with fresh vegetables, and if you are a gourmet, a mango cheesecake.

Le nez est fruité et exubérant. Les notes de pamplemousse se mêlent aux effluves de mangue. L’attaque est vive et franche. Les fruits à chair jaune explosent au palais. La fin de bouche quant à elle, nous séduit par son ambivalence, entre douceur et fraîcheur, laissant sur le bout de la langue une touche acidulé. En apéritif, sur des fromages de chèvre frais, un dahl de lentilles corail aux petits légumes de saison et pour les plus gourmands … un cheesecake à la mangue.

Jean-Pierre Guyon uses "baie par baie technique" already since 2020. The result is called the pinot caviar: grapes destemmed by hand, berry by berry, with a pair of scissors - leaving the grapes intact with the pedicels in place.
