Natural wine. 100% Carignan, harvested by hand on a 2 hectare parcel of old goblet vines at an altitude of 343m on a clay-limestone soil. Vinified in semi - carbonic maceration, this wine, like all those from the estate, is non-yeast, little sulfite added, unfiltered, not fined. Gourmet, spicy, it clearly shows that Carignan is a great variety from the South of France. This wine accompanies toast of black olive tapenade, a stew Béarnaise, a chop suey with vegetables, or a tender veal chop from Aubrac.
