Vintage & Region: 2022 (or current available) — DO Valdeorras, Galicia, Spain.
Grape Variety & Terroir: 100% Godello. The vineyards of Pazo de Toubes average ~30 years of age, planted on sandy-sedimentary soils with excellent drainage in the Larouco area. Vinification involves manual harvesting, light pressing and natural fermentation at low temperatures on fine lees, emphasising the subtleties of the variety and terroir.
Alcohol: Approx. 12.5% ABV.
Appearance: Bright straw-yellow with greenish glints, showing clarity and freshness.
Aroma: Elegant and layered — citrus (lemon, grapefruit), stone fruits (apricot, nectarine), botanical/herbal hints and a background of almond-shell or light pastry nuance from lees ageing.
Palate: Medium-bodied yet lively: crisp acidity gives lift, while the mineral core from the steep soils adds tension and character. Flavours mirror the nose with citrus and stone fruit, complemented by a subtle mousse-like freshness in the entry and a smooth texture.
Finish: Long and persistent with mineral clarity, the palate leaves a refreshing imprint and invites another sip.
Food Pairing: Excellent with fresh shellfish, oysters, flat fish, rich seafood rice, fresh cheeses or vibrant vegetable dishes. Serve at 8-10 °C for best expression.
